Tasty Tuesday: Zürcher Geschnetzeltes with Crispy Rösti
(Swiss Veal & Mushroom Cream Sauce over Golden Rösti Potatoes)
Although this dish originated in nearby Zurich, it is served throughout Switzerland, including Basel, and is considered one of the country's signature meals. It features tender strips of veal in a creamy mushroom and white wine sauce served over crispy potato rösti. While many Swiss restaurants recommend white wine, a lighter, elegant Pinot Noir also pairs beautifully because it complements the mushrooms, cream sauce, and delicate veal without overpowering them. A Russian River Pinot Noir is an especially good match because of its bright cherry fruit, earthy notes, and balanced acidity.
Suggested Wine Pairing: Ketcham Estate Russian River Royale Pinot Noir
Ingredients:
Veal & Mushroom Sauce
- 1 1/2 pounds veal strips (or chicken if preferred)
- 2 tablespoons butter
- 8 oz cremini mushrooms, sliced (baby portobello)
- 1 small onion, finely sliced
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 3/4 cup beef stock
- 3/4 cup heavy cream
- 1 teaspoon Dijon mustard
- 1 tablespoon flour
- Salt & pepper
- Fresh parsley
Rösti
- 4 Yukon Gold potatoes
- 2 tablespoons butter
- Salt & pepper
Directions
- Boil potatoes until just tender, cool, then refrigerate several hours.
- Peel and grate potatoes
- Heat butter in skillet and press potatoes into a large cake.
- Cook until golden brown, flip, and crisp the second side.
- Season veal with salt and pepper.
- Sear quickly in butter and remove.
- Cook onions and mushrooms until browned.
- Add garlic.
- Stir in flour.
- De glaze with white wine.
- Add stock and simmer.
- Stir in cream and Dijon.
- Return veal and cook just until heated through.
- Sever over crispy rösti with parsley.
