This week's Tasty Tuesday features a comforting, crowd-pleasing casserole from Norma Normington—a recipe that's simple to prepare, easy to customize, and perfect for busy weeknights, potlucks, or casual gatherings with friends.
Crunchy tortilla chips, seasoned ground beef, creamy soups, Rotel tomatoes, and melted cheese come together to create a hearty casserole that's guaranteed to disappear quickly. Pair it with a glass of your favorite Ketcham Estate wine, and you've got a meal worth savoring.

Ingredients:
- Doritos® or your favorite tortilla chips
- 1 medium onion, diced
- 1 pound ground beef (preferably Podunk's Ranch beef)
- Olive oil (or your favorite cooking oil)
- About 1 tablespoon Penzeys Bold Taco Seasoning
- 1 can Campbell's® Golden Mushroom Soup
- 1 can Campbell's® Cream of Chicken Soup
- 1 can Rotel® Diced Tomatoes (Original or Mild)
- Shredded taco blend cheese (or your favorite shredded cheese)
- Preheat your oven to 350°F.
- Heat a small amount of olive oil in a skillet over medium heat.
- Sauté the diced onion until it begins to soften.
- Add the ground beef and cook until browned.
- Sprinkle in about 1 tablespoon of Penzeys Bold Taco Seasoning and stir well to coat the meat. (Norma notes that she doesn't always season it, but this addition turned out especially delicious.)
- Drain any excess grease.
- In a mixing bowl, combine:
Campbell's Golden
Mushroom Soup
Campbell's Cream of Chicken Soup
Rotel Tomatoes
Mix until well blended. - Lightly grease a large baking dish.
- Layer the casserole:
Crushed Doritos or tortilla chips
Ground beef and onion mixture
Soup and tomato mixture - Bake for 30 minutes.
- Remove from the oven and sprinkle generously with shredded cheese.
- Return to the oven and bake for 10 more minutes.
- Sprinkle additional crushed Doritos over the top.
- Bake another 5 minutes until the chips are lightly toasted.
- Allow the casserole to cool for several minutes before serving.
