Tasty Tuesday: Norma Normington's Cheesy Taco Casserole

There's something special about recipes that have been shared around family tables for years. This week's Tasty Tuesday features a comforting, crowd-pleasing casserole from Norma Normington—a recipe that's simple to prepare, easy to customize, and perfect for busy weeknights, potlucks, or casual gatherings with friends.

Crunchy tortilla chips, seasoned ground beef, creamy soups, Rotel tomatoes, and melted cheese come together to create a hearty casserole that's guaranteed to disappear quickly. Pair it with a glass of your favorite Ketcham Estate wine, and you've got a meal worth savoring.

Suggested Wine Pairing: Ketcham Estate Pinot Noir Nick's Cuvée

Ingredients:

  • Doritos® or your favorite tortilla chips
  • 1 medium onion, diced
  • 1 pound ground beef (preferably Podunk's Ranch beef)
  • Olive oil (or your favorite cooking oil)
  • About 1 tablespoon Penzeys Bold Taco Seasoning
  • 1 can Campbell's® Golden Mushroom Soup
  • 1 can Campbell's® Cream of Chicken Soup
  • 1 can Rotel® Diced Tomatoes (Original or Mild)
  • Shredded taco blend cheese (or your favorite shredded cheese)
  1. Preheat your oven to 350°F.
  2. Heat a small amount of olive oil in a skillet over medium heat.
  3. Sauté the diced onion until it begins to soften.
  4. Add the ground beef and cook until browned.
  5. Sprinkle in about 1 tablespoon of Penzeys Bold Taco Seasoning and stir well to coat the meat. (Norma notes that she doesn't always season it, but this addition turned out especially delicious.)
  6. Drain any excess grease.
  7. In a mixing bowl, combine:
    Campbell's Golden
    Mushroom Soup
    Campbell's Cream of Chicken Soup
    Rotel Tomatoes
    Mix until well blended.
  8. Lightly grease a large baking dish.
  9. Layer the casserole:
    Crushed Doritos or tortilla chips
    Ground beef and onion mixture
    Soup and tomato mixture
  10. Bake for 30 minutes.
  11. Remove from the oven and sprinkle generously with shredded cheese.
  12. Return to the oven and bake for 10 more minutes.
  13. Sprinkle additional crushed Doritos over the top.
  14. Bake another 5 minutes until the chips are lightly toasted.
  15. Allow the casserole to cool for several minutes before serving.

Make It Your Own

One of the best things about this casserole is how easy it is to customize. Try using:

  • Mild, Nacho Cheese, or Cool Ranch Doritos
  • Ground turkey or chicken
  • Black beans or corn for extra texture
  • Pepper Jack cheese for a little extra kick
  • Jalapeños if you enjoy more heat

This is a very easy sauce that has evolved over time. Allie makes it weekly for her family and it gets devoured. Allie loves that she can whip it up in less time than it takes to boil the pasta and it can be make with food she typically already has in her kitchen. Allie cheats a little in that she adds a jar of pre-made high quality marinara sauce to the meat. Allie serves the sauce over pasta (the current favorite in her house is Farfalli) with a simple tossed salad and a loaf of frozen garlic bread (like Pepperidge Farm).

This is a family favorite! Even our son Nick who is the pickiest of eaters devours what he affectionately calls Lemon Butt Chicken. I love to bring this to friends when I am helping with a meal train because it is so fast and easy to prepare and I deliver the uncooked meal to my friend and their home smells divine while the chicken is in the oven. It is an easy crowd pleaser and a meal we enjoy weekly.
