Tasty Tuesday: Creamy Wild Mushroom Pasta Paired with Ketcham Pinot Noir

There is something about cooler evenings and the beginning of fall that calls for a warm, comforting meal—and this week’s Tasty Tuesday is just that.

Creamy pasta, savory wild mushrooms, garlic, fresh thyme and Parmesan come together in a dish that feels special without being difficult to prepare. Pair it with a glass of Ketcham Estate 2022 Pinot Noir, and you have an easy wine-country dinner perfect for a quiet evening at home or entertaining friends.

Recipe: Creamy Wild Mushroom Pasta

Wine Pairing: Ketcham Pinot Noir

Ingredients:

  • 12 oz fettuccine, tagliatelle or your favorite pasta
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 12–16 oz mixed mushrooms, sliced Cremini, shiitake, oyster or your favorite wild mushrooms all work well
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves, plus more for garnish
  • ½ cup dry white wine or vegetable/chicken broth
  • ¾ cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • ¼ teaspoon red pepper flakes, optional
  • Additional shaved Parmesan for serving
  • Fresh parsley, optional
  • Ketcham Estate 2022 Pinot Noir for pairing

Directions:

  1. Cook the pasta. Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Before draining, reserve about 1 cup of the pasta water.
  2. Sauté the mushrooms. Heat olive oil and butter in a large skillet over medium-high heat. Add the mushrooms in an even layer and allow them to cook for several minutes before stirring. Continue cooking until they are tender and nicely browned.
  3. Add the aromatics. Reduce the heat slightly and add the garlic, thyme and optional red pepper flakes. Cook for about 1 minute, just until fragrant.
  4. Build the sauce. Add the white wine or broth and scrape up any flavorful browned bits from the bottom of the pan. Allow it to simmer for 2–3 minutes.
  5. Make it creamy. Stir in the heavy cream and Parmesan. Simmer gently until the sauce begins to thicken.
  6. Bring everything together. Add the drained pasta and toss until completely coated. If the sauce is too thick, add a little reserved pasta water until it reaches the consistency you like. Season with salt and freshly ground pepper.
  7. Serve. Finish with shaved Parmesan, fresh thyme and parsley if desired.
