Tasty Tuesday: Fall Comfort with Cabernet Sauvignon

Paired with a chilled bottle of Ketcham Viognier

There is something special about a crisp fall evening, a comforting homemade dinner, and a beautiful glass of red wine.

This week's Tasty Tuesday brings together tender, slow-braised beef short ribs, fresh rosemary, garlic, and a rich, savory sauce. Served over creamy mashed potatoes, this dish is the perfect way to welcome the flavors of autumn.

And what better wine to enjoy alongside it than our 2020 Ketcham Estate Cabernet Sauvignon Carrière from Alexander Valley?

🍽️ Garlic & Rosemary Braised Short Ribs

Servings: 4

Prep Time: 20 minutes

Cook Time: Approximately 3 hours

  • 3–4 lbs. bone-in beef short ribs
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 1 large yellow onion, diced
  • 3 carrots, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup dry red wine
  • 2 cups beef broth
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • 1 tablespoon butter (optional)

For Serving:

  • Creamy mashed potatoes
  • Fresh rosemary for garnish

Directions:

  1. Preheat the oven to 325°F. Pat the short ribs dry and generously season with salt and pepper.
  2. Sear the beef. Heat olive oil in a large Dutch oven over medium-high heat. Brown the short ribs on all sides, then remove and set aside.
  3. Build the flavor. Add onion and carrots to the pot and cook for 5 minutes. Stir in garlic and tomato paste, cooking for another minute.
  4. Add the wine. Pour in the red wine, scraping the bottom of the pot to release all those delicious browned bits. Simmer for 3–4 minutes.
  5. Braise slowly. Add beef broth, rosemary, thyme, and bay leaves. Return the short ribs to the pot, cover, and transfer to the oven.
  6. Cook until tender. Braise for approximately 2½–3 hours, until the meat is fork-tender.
  7. Finish the sauce. Remove the ribs, discard the herbs and bay leaves, and skim excess fat from the cooking liquid. Simmer the sauce until slightly reduced. Stir in butter if desired.
  8. Serve and enjoy!
  9. Place short ribs over a generous helping of creamy mashed potatoes, spoon the savory sauce over the top, and garnish with fresh rosemary.
